Object of research is process of formation and functioning a subcomplex of beefproduct of the Kiev area and also economic attitudes which are connected to improvement of the organizational-economic mechanism in system: the manufacturer - processing industry-the seller-the consumer. The purpose - generalization of theoretical and methodological positions, which concern with development of directions of development, improvement of the organization of manufacture of meat of large horned livestock and a substantiation of ways of increase of his economic efficiency in conditions of market attitudes. Methods: abstract-logic; monographic; economic-statistical; regress analysis; economic-mathematical; methods of the economic analysis; a method of statistical groupings and others. Scientific novelty: it is developed scientific-theoretical positions of formation and functioning of the economic mechanism of increase of a production efficiency of a beef; it is lead the complex analysis of the regional market ofa beef in view of formation of demand for resources and their offers; it is revealed a degree of influence of major factors which form a level of economic efficiency of manufacture of a beef in facilities of a forest-steppe zone of the Kiev area; it is optimized a level of maintenance by fodder resources of a number of cattle in facilities with a different degree of concentration of branch; it is developed key parameters of development of cattle breeding on the basis of optimization of manufacture of meat of large horned livestock in modelling facilities; directions of improvement of organizational-economic attitudes in the enterprises on manufacture of a beef are proved; Manufacture - process - realization is offered main principles of formation of the regional market of meat of large horned livestock and a way of improvement of attitudes in system. Results of researches are used in practical activities of the agricultural enterprises and the state controls, and also introduced into educational process NAU.
