By the purpose of researches it is foreseen to perfect the hardwares of the machine milking of sheep and technology of processing of sheep milk on a brynza and hard cheeses, their packing. The generally accepted methods of researches are used in work: zootechnics, morphological, biological; laboratory, methods of mathematical statistics. The results of the conducted researches enable to take away uteruses of suitable to the machine milking and get high-quality milk due to the device for the separate milking of stakes udder and the improved milking to glass. The improved technologies of making of brynza and hard cheeses provide the receipt of high-quality products and protracted their storage in the conditions of farmer and peasant economies. Economic efficiency of introduction in a calculation on a 1 ц brynza and hard cheeses of pekoryno and kachkoval accordingly made 461, 579 and 702 hryvnyas (at comparison of traditional technologies of making of brynza and hard cheeses with improved) As a result ofcomparative analysis of the improved technologies of making of brynza and hard cheeses it is set with traditional, that an income from realization made 1 kg of the lightly salted brynza 4 hryvnyas a 61 copeck, that on 2 hryvnyas 16 copecks more than income from realization 1 kg of brine brynza of made on traditional technology. Materials of researches are inculcated in the conditions of the Experimental economy " Markeevo", Chaplynskogo district of the Kherson region and Agrofyrmy " Askanyya-new".
