Essay

On the basis of comprehensive studies, the genetic structure of the population of cows of the Ukrainian black-and-white dairy cows of the base farm was determined by the kapa-casein gene, protein composition, its nutritional, biological value, technological properties, safety of milk, cottage cheese and whey during storage, depending on the linear origin, season year and genotype by kapa-casein gene.
