Object is process of decision-making administrative effective by the subject of menage in the conditions of vagueness and risk. Purpose is development of theoretical and methodological principles and practical recommendations in relation to creation of the effective system of analysis, estimation and account of economic risk in activity of enterprises on the example of baking industry of Ukraine. Research methods: supervision and comparison, formalization, generalization, systematization, classification, analysis and synthesis, quantitative, high-quality and abstractly-logic analysis expert estimations, integral method of probabilistic estimation of risk. In work complex theoretical research is conducted and methodical estimations of economic risk and account of him in activity of enterprises of baking industry of Ukraine, it is specified and deep a concept “risk”, “economic risk” “risk-management”, certainly place of economic risk in the system of economic categories. The integral method of probabilistic estimation of risk factors is developed on micro-, meso-, macro-levels of their influence on efficiency of economic activity and on his basis integral estimation of economic risk of baking enterprises is carried out by system of complex indexes, and also generalized estimation of risk of their activity, the method of conducting of complex estimation of factors of economic risk of baking enterprises and choice of effective decision of risk management depending on integral estimation of degree of risk of baking enterprises is improved. Offered ways of realization of process of risk management on the enterprises of baking industry. Research the dissertation is dedicated to development of theoretical, methodological and practical backgrounds of the integral assessment and consideration of risk for justification of the main directions of effective management of bakeries results are the works of enterprises of food retail industry inculcated in practice. Enterprises are the sphere of the use.
