The thesis is devoted to the definition of theoretical statements and development of methodical tools to managing raw materials stock in catering enterprises. Economic essence of the notions "raw materials stock" and "managing commodities and raw materials stock" is specified in the thesis. Peculiarities of these notions within the system of restaurant business are defined. Principles of classification of raw materials and commodities stock with the account of the specific signs of restaurant business are generalized and systematized. Factors influencing the volume of raw materials and com-modities stock in catering enterprises are systematized. Criteria for the optimization of the volume of raw materials and commodities stock in restaurants are defined. Economico-mathematical model, the use of which permits to reveal the influence of factors on the raw materials and commodities stock turnover, to reveal reverves of acceleration and receive fore-casting meanings of the raw materials and commodities stock turnover.
