The thesis works is devoted to develop multifunctional enteral-sorbennts reseption technology on the flax seed and its products basis. Chemical composition of enteralsorbents on the flax seed and its products basis having an inhibitory activity concerning proteolytic enzymes is studied, their functional-physiological properties characteristic is given. For the first time inhibitory activity of flax seed mucilaginous substances concerning trypsin and chymotrypsin serine proteases. The data interrelation of inhibitory activity with biopolymers, forming the flax seed water-soluble complex, monosaccharides content are confirming, are obtained. It is shown that trypsin inhibition by flax seed mucilaginous substances has competitive character are calculated. The physical and chemical characteristic of the water-soluble inhibitor properties are s tudied. Develop technology of flax seed based food supplements-enteralsorbents possessing ingibitory and antioxidative activity. Functional-physiological and microbiological characteristics of developed food supplements are investigated. The opportunity of inclusion flax seed based enteralsorbents in contents of a bakery goods is shown.
