. The dissertation is devoted to the tecnology of intracelullar glucose oxidase elabo-ration from Asp. niger ATCC 166808 and its using in a diabetic fruity-vegetable nectars production. The way of glucose oxidase soluble preparation immobilization in a polyacrelamid gel was elaborated.The optimum para- meters of sucrose hydrolysis by invertase and influence appro- priateness of sucrose inversion degree by temperature, substrate and enzyme amount, in-version time was deter- mined. The technology of diabetic fruity-vegetable syrup production on a base of inver-sion sacchared oxidation products and special application fruity-vegetable nectars technology.
