Essay

Object. The content of xenobiotics bin raw food and food-staffs, food allowances of different age and professional groups of population of industrial and control regions. Purpose. Scientifically to give proof and to develop measures on lowering contamination in raw food and food-staffs with priority dirtiness, definition of potential risk of harmful influence on health of the population of the industrial region dangerous concentrations of xenobiotics. Methods. Sanitary-hygienic, physico-chemical, toxicological including atom-absorbed, polagraphical, chromatographical (definition of the content of toxical elements, pesticides, nitrates in raw food and food-staffs), statistical and mathematical (classical methods of variation statistic with calculation of middle quantities, estimation of truth divergence of middle quantities with the help of Student’s criterion, estimation of real food allowances of different age and professional groups of population with budget method). Theoretical and practical results. Complex system of preventive measures of alimentary ecological defeats of population in industrial region. Methodical recommendations “Principles and measures in organization of monitoring of heavy metals and preventive measures of their harmful influence on health of the population of ecocrisis region” ( the act of inculcation in Donets”k regional sanitary – hygienic station from 28.08.03, the act of inculcation in Sumy regional sanitary – hygienic station from 01.09.03). Novelty. For the first time in new social – economic conditions of Ukraine has been carried out overall hygienic analysis contamination of raw food and food-staffs with toxical elements, pesticides, nitrates on the basis of which new facts about safety of nutrition of the population of industrial and control agrarian regions. For the time has been carried out the comparative analysis of contamination of raw food and food-staffs with toxical elements between industrial and agrarian control regions, priority xenobiotics have been determinedand daily xenobiotic loading and conditional toxical loading on organism of different age and professional groups of population has been calculated. On the basis of the elaborated conceptual model the protection of the inner habitat of the organism has got scientific basis and further development of the system of preventive measures. At enterprises of agriculture food industry with realization intradepartmental laboratory control of raw and food – staffs quality, public catering organization medical and educational establishments, at restaurants enterprises during entrance control, technology of preparing dishes, with carrying out state sanitary – hygienic inspectors and veterinary – sanitary inspectors by the state sanitary – hygienic establishments and veterinary medicine, with certification by consumers standard bodies.
