Subject: formation features of productivity potential and grain quality in winter bread wheat depending on agroecological factors and cultivation techniques. Aim: to ascertain the agroecological factors' influence on grain yield and grain quality, reological properties of dough and bread quality of winter wheat in the central part of the Forest-Steppe. Methods: field, laboratory, measuring-weight, calculated comparison, mathematical statistics. Novelty: variants of variety agrotechnics for the regionized cultivars of winter wheat have been improved. The dependence of grain quality, reological properties of dough and bread quality on weather conditions in the period of formation and filling of grain has been scientifically grounded. Results: the application of the recommended elements of the technologies in the central Forest-Steppe permits to realize potential grain yield of winter wheat fuller at the level of 5,07-6,19 t/ha of the 1st-2nd grade of quality. Application stage: the results of the investigations have been applied in plant production of SESF "Stepne" of Poltavskyi IAIE, SAE "Druzhba", PAE "Druzhba" in Poltava Oblast on the total area over 75 hectares. Application area: agricultural enterprises of all the forms of ownership.
