The dissertation is devoted to the scientific ground and development of technologies of functional ingredients with pro- and prеbiotic properties. On results of the analysis of biopolymer complex on of organoleptic indexes and structural descriptions of sugar beet, technology of receipt of carrier for probiotic microorganisms and prеbiotic constituent on his basis is developed, with the improved sorbent and organoleptic properties. The optimum terms of cultivation are definite, at joint immobilization,lacto- and bifidobacterium on a carrier.The developed technologies allow to get products apt at the removal of violations and correction of gastro intestinal tract microflore. The term of fitness of products, during which they save the properties, is definite.
