Object - dynamics of change of sowing and technological qualities of grain of winter wheat in the process of passing by period of afterripening and during subsequent storage. Purpose - research of dynamics of changes of sowing and technological qualities of grain of winter soft and hard wheat in the period of afterripening and subsequent storage depending on the agrotechnical, soil-climatic terms of growing in Crimea for his more rational use. Methods - the field, laboratory, analytical, organoleptical - for the studying of changes of sowing and technological qualities of grain of wheat. Statistical - for determination of degree of influence of different factors on the change of quality of grain in the period of afterripening and storage. Results - it is certain that grain of hard wheat passes the process of afterripening slower and longer, that grain of soft wheat. Influence of high quality features is exposed, agrotechnical, soil-climatic terms of growing on the process of afterripening, on the dynamics of change of quality of grain in this period, both at soft and at hard wheat. It is set that grain, reared in the different natural areas of Crimea, passes this period variously, and grain, reared on low agrophone, has more slow rates of passing of afterripening. The duration of this period was certain for grain of different sorts of soft and hard wheat. The optimum methods of passing of afterripening and subsequent storage of grain of wheat are certain. It is set that the leaving of grain in the conditions of free air access within afterripening is abbreviated, that, in same queue, allows to drive cleaned grain masses to the stable state for subsequent storage and more effective use in the earliest possible date. The results will be useful at the production of grain of soft and hard wheat of high quality, will be the application in optimization of process of afterripening and subsequent storage, and on the whole, will be instrumental in the increase of efficiency of production of wheat grain in Crimea
