Essay

Dissertation is directed on the deep study of pancreatic lipase inhibitors from the rape seed and receipt of biologically active and functional food additions on their basis. Considerable attention in work is spared comprehensive description of lipase inhibitors of phenolic and phospholipid nature, determination of kinetic parameters of inhibitory reaction, stabilizing of phenolic nature inhibitor by the immobilisation of it on biopolymeric matrix. Developed technology of biologically active additions receipt is economically grounded and includes the followings basic stages: extraction of phenolic components from unfatted rape seed, receipt of the water solution of phenolic components and antioxidant, immobilisation on food fibres of wheat brans, dryings of the got product, capsulation and packing of BAD.
