The thesis is devoted to development of technology of reception and concentra-tion of lipases from a secondary products of processing of wheat grains (a germ and bran) and their use in manufacture of fruitvegetable mayonnaise. Parametres of concentraction and purification of lipases extraction from germs and brans of wheat grains, are developed.
