Essay

The object - cultures of fungi, proteins, enzymes complex, culture of beer yeast Saccharomyces cerevisiae. The aim was to selection of producers of hydrolytic enzymes, capable to destroy a cell wall of yeast, allocation and the characteristic extracellular enzymes complex for reception yeasts hydrolyzates. Methods - cultivation of fungi and definition of indicators of growth, definition enzymes activity, spectrophotometerical, electrophoresis, chromatography, microscopic, statistical (nonparametric). The excretion intensity of the hydrolytic enzymes from different fungi was studied; ability to destroy of yeast sell wall Saccharomyces cerevisiae was shown. Selection of zymogens for the purpose of yeast hydrolyze production by demolish of yeast sell wall was done. During yeast suspension incubation with enzymatic complex from Trichoderma viride, Chaetomium globossum, Рleurotus ostreatus different degree of sell destruction was demonstrated; during incubation dead and destroyed yeast sells, protein and nucleic acids level were increased in the medium, breathing effectiveness of suspension decreasing continuously. Enzymes complex Рleurotus ostreatus which consists of 5 proteins with molecular weight 10-40 кДа is received. The sphere of use is isolation of hydrolytic enzymes and working out with their use of technology of reception yeasts hydrolyzates for the purpose to receive biologically active nutrients.
