Dissertation is directed on the deep study of pancreatitis amylase inhibitors from husk of oat and receipt biologically active and functional food additions on their basis. Considerable attention is in work is spared comprehensive description of amylase inhibitors of albuminous nature, determination of kinetic parameters of inhibitory reaction, stabilizing of albuminous nature inhibitor by immobilization of it on biopolymeric matrix. Developed technology of BAA receipt is economically grounded and includes the following basic stages: extraction of pancreatitis amylase inhibitor from husk of oat, immobilization on food polysaccharides, drying and packing of BAD.
