Essay

This work is devoted to the raise of juice purification efficiency by means of using preliminary stepwise liming-carbonation of raw juice with subsequent sediment separation before the main liming. Apparatus has been developed for carrying out of the preliminary stepwise liming-carbonation of raw juice. Employment of the stepwise liming-carbonation of raw juice with subsequent sediment separation before the main liming gives possibility to decrease total lime consumption up to 0.6 0.7 % on juice weight, maintaining high quality characteristics of purified juice. It was determined that the method of raw juice purification with sediment separation before the main liming does not give possibility to carbonate main liming juice up to the end alkalinity of the 2nd carbonation without interim filtration.
