The thesis has been designed to improve the technology of the complex complex treatment of flax seeds with application of enzymes, which allows to receive functional products and ingredients (flax oil, water soluble polysaccharides of flax seeds, protein concentrate, food fibres) and to increase their output with preservation of their physical and chemical and nutritious properties, and the biological full value as well.
