Complex researches of the corn endospermal mutants: sugary-1, sugary-2, amilosa extender, waxy in comparison with subspecies of Zea mays Charkovskiy-294 were carried out. Quantitave and qualitative analyses of: peptides, aminoacids, lipids, some pigments, carbohydrates, phenolic compounds - flavonoids, hydroxycinnamiс acids were carried out. Flavon derivatives apigenin, luteolin, chryseriol, diosmetin, tricin, apigenin-7-O-?-D-glucopyranoside, cynaroside, 3'4'5'-threehydroxyflavon-О-?-D-glucopyranoside, scolymoside, chryseriol-7-О-L-rhamnopyranoside-О-?-D-glucopyranoside and hydroxycinnamic acids: caffeic, chlorogenic and rosmarinic were isolated and identified at first time. Quantitative analysis of these phenolic compounds was carried out. Specific morphological features of starch grains of 6 subspecies and 10 endospermal mutants were established. Anatomical features of corn leaves were determined. Technology of obtaining of dry extract of corn leaves was developed, pharmacological effects - hepatoprotective, antioxidant and anti-inflammatory were established.
