Thesis for scientific degree of candidate of agricultural sciences on specialty 03.00.20 - biotechnology, Lviv National University of Veterinary Medicine and biotechnology named after S.Z. Gzhytskyj, Lviv, 2011. In dissertation the presented results in relation to influence of heavy metals on the biotechnological processes of processing of milk at the correction of Echinacea purple their tincture, in particular her positive influence on microbial population of ferment for the production of soul-milk cheese. It is set that bringing of extract of Echinacea in the process of the biotechnological processing of milk on soul-milk cheese assists the increase of lactate microorganisms of ferment. The amount of oligoelementss increases in a ferment which positively influences on the height of lactate streptococci what are used in composition a ferment. Time of fermentation of milk grows short. The biotechnological process of processing of milk with the use of extract of Echinacea on soul-milk cheese draws the leading out of excessive level of heavy metals in a serum and quality of soul-milk cheese which is suitable for a consumption gets better thus. Worked out biotechnological chart of receipt of soul-milk cheese is from milk which was got in a zone with the increased technogenic loading by heavy metals. It is suggested in the process of the biotechnological processing of milk on soul-milk cheese to bring in the extract of Echinacea in a dose 2 mls/l of milk, as biologically active substance of protector action. Monitoring of level of heavy metals is conducted in trophic to the chain
