The thesis is devoted to development of the technology ofproteases immobilization in the pectin-chitosan complex. Considerable attention is paid to the characterization of soluble and insoluble chitosan-pectin complexes, the study of the parameters of the protease immobilization in polysaccharide complex and polyelectrolyte microcapsules, physico-chemical characterization of complex biopolymer chitosan-trypsin-pectin, chitosan-chymotrypsin-pectin and polyelectrolyte microcapsules with immobilized proteases,as well as the determination of kinetic parameters of casein hydrolysis by trypsin, immobilized in a chitosan-pectin complex. Designed and economically feasible the technology of protease, immobilized in chitosan-pectin complex.
