The thesis is devoted to the development of technology of biopolymer complexes with lysozyme activity of plant origin. Considerable attention is paid in the characterization of lysozyme extracted from the juice of the beet horseradish: molecular weight, the presence of isoforms, amino acid composition, determination of kinetic parameters of hydrolysis of specific substrate of lysozyme Micrococcus lysodeikticus; as well as the study of conditions of immobilization and characterization of biopolymer complexes with lysozyme activity of plant materials. Developed and economically feasible technology of biopolymer complexes with lysozyme activity.
