Essay

The dissertation contains research results of biotechnology of alcohol fermentation of glucose-fructose syrups development. The quality metrics for glucose-fructose syrups (GFS) from the point of view of alcohol fermentation were established. The effective yeast culture Saccharomyces cerevisiae У-563 for wort with GFS was selected. The cultivation regimes were optimized by the following parameters: pH, nutrients doses, yeastgeneration process duration, starting yeast number and solids concentration in wort for yeasts and in the main wort. The effective technological regimes for alcohol fermentation of wort with GFS-42 and mature mash generation with minimum byproducts were established. The gathered data was confirmed by statistical analysis. The technologic-equipment scheme for biotechnology of alcohol fermentation of GFS and "Technological instructions for alcohol fermentation of GFS" were developed. The approbation of the technology in working environment was done at state-run enterprise "Lujany experimental alcohol factory". The patent of Ukraine for useful model № 68613 "The method of sugar-containing raw materials preparation for fermentation" was received
