Dissertation work is based on development of theoretical bases of oil extraction process from Amaranth hybrid seeds. Mechanism and kinetics of oil extraction from Amaranth hybrid seeds have been researched. The impact of temperature, levels of seeds comminution and influence of extragent’s nature on the speed of oil extraction from Amaranth seeds has been considered. It has been proposed to use, as extragent, of 1:1 ethanol- dichloromethane mixture in order to obtain oil that meets quality standards.
