The thesis is devoted to the scientific substantiation of the medical and biological roles of the traditional milk and sour milk products in providing micronutrients for child population.During the experimental research the actual levels of micronutrients in milk and traditional dairy products of domestic production were identified and a significant decrease in calcium, potassium, phosphorus, iron, copper, zinc, iodine, vitamin A and C towards analogous handbooks data 1979, 1987 was established. The calculations and analysis of integral indexes was carried out and a clear pattern of growth for different types of milk and sour milk products with increasing fat was found. The decrease of level of consumption of sour milk products of school age children was found in all regions of Ukraine. Carried out a determination of micronutrients sufficiency of children and teenagers through their real content in dairy products and regional features consumption.Based on these results, the ways of correction were substantiated and practical recommendations for reducing calcium deficiency in the diet of the child population of Ukraine have been proposed.
