Essay

Dissertation is devoted to the elaboration of encapsulation technology of the probiotics. Considerable attention is spared to the the conditions of cultivation of lactobacilli on nutrient medium; using of low-ester pectin as a protective shell for probiotics; the determined experimentally of the quantity introduced probiotic starter cultures in pectin solution that allows to get gelling granules spherical shape; to research of protective properties of pectin and pectin-starch granules to the adverse conditions of the gastrointestinal tract. It is developed normative documents, the technological sheme of the obtaining encapsulated probiotic and synbiotic supplements.
