Object: food industry of Ukrainian provinces of the Russian Empire in the second half of XIX - early XX century. Objective: to reveal the process of the formation of the scientific and technological progress on the example of food industries in Ukrainian provinces of the Russian Empire in the second half of the nineteenth - early twentieth century. Practical significance: scientific knowledge of the scientific and technological progress in the food industry in Ukrainian provinces of the Russian Empire is expanded. Methods: problem-chronological, comparative historical, diachronic, typological analytical, systematic and structural, retrospective, logical and analytical.
