Research object: influence of filtration and carbonation on safety and quality of natural mineral curative table water (organoleptic, sanitary-chemical, sanitary-microbiological, microbiological, chemical properties, the ability to cleanse itself). Methods: organoleptic, sanitary-chemical, sanitary-microbiological, microbiological, chemical, statistical. Theoretical and practical results: substantiation of the improvement of the bottled natural mineral curative table waters quality with the aim to preserve their natural healing qualities and safety for population Scientific novelty: the importance of autochthonous microorganisms during the period of bottled natural mineral curative table waters preservation as an important point of their hygienic estimation has been revealed. First mineral water microorganisms' ranking by their influence on mineral water quality has been done. It has been established that carbon dioxide does not ensure epidemic safety of the bottled natural mineral curative table waters. Inexpediency of the bottled natural mineral curative table waters saturation has been proved as it suppresses the development of the majority of autochthonous microorganisms which ensures aqueous healing properties. The necessity of safety index total bacterial count implementation at 20?C-22?C has been substantiated. The algorithm of hygienic estimation of the bottled natural mineral curative table waters according to microbiological indicators have been unified. Level of inculcation: results are inculcated in 1 manual, 1 methods, 10 acts implement the results of the thesis in the studying process and one act of practical implementation of sanitary testing showed, 4 acts of the enterprises and 1 act implement - public institution.
