Dissertation is devoted to the hygienic assessment of food and biological value of higher fungi, cultivated on the nutrient mediums with and addition of biometal nanocitrates, obtained with the help of nanotechnology and scientific substantiation of the optimization and rise of the efficiency of the method for fungi cultivation. Impact of biometal citrates on the growth of fungi mycelium, peculiarities of their accumulation with mycelium were studied, main regularities of these processes were determined. Bioavailability of metals, accumulated by fungi mycelium and their safety, and also food and biological value of mycelium of fungi G.lucidum, cultivated on the mediums enriched with Zn, Se, Ge citrates, was studied. A positive effect of these citrates on the synthesis of protein, fat, polysaccharides, and vitamins with mycelium was revealed and increase of biological value of protein and fat was determined. A perspective of the use of Zn, Se, and Ge nanocitrates for the rise of the efficiency of biotechnology for fungi cultivation has been rationalized.
