The object of study - the formation of dogwood fruit quality and its preservation during freezing and cold storage. The aim of the study - to find out the characteristics of the variety and impact of weather conditions on the duration of the passage of phenological phases forming dogwood fruit quality in terms of Right-Bank Forest-Steppe Ukraine; justify objective indicators of ripeness of fruit dogwood use-for-freeze; set weight loss and ability volohoutrymuvalnu dogwood fruits frozen in the air and syrup; explore the preservation of quality frozen fruit dogwood in the air and syrup over low storage; assess the suitability of fruits of dogwood varieties Myhaylovskyy and Lukyanovskyy to freezing and cold storage; develop technological instructions for the production of frozen fruits of dogwood and implement them in production; calculate the economic efficiency of production and cold storage frozen fruit dogwood. Methods: field, laboratory, chemical, organoleptic, statistical, economic calculation. Scientific novelty - found common patterns forming yield and content of the main components of the composition in the fruits of dogwood grown in Right-bank Ukraine forest steppe, depending on the characteristics of the variety and weather conditions; established patterns influence the growing season agro-climatic parameters on the formation of the fruit, to predict the quality of the harvest; systematized indicators that determine consumer ripeness dogwood fruit for freezing and cold storage; The features for the first time preserving the quality of dogwood fruit varieties Myhaylovskyy and Lukyanovskyy freezing in the air and syrups; the latest proven benefits for their freezing and low temperature storage; established economic feasibility of production and cold storage frozen fruit dogwood in the air and syrup. The degree of implementation - put into production and manufactured pilot-scale batch of frozen fruit dogwood Korsun-Shevchenko fruit and vegetable cannery (2014) and developed technological instructions "Frozen fruit dogwood loose" and "Frozen dogwood fruit in sugar syrup."
