The thesis was devoted to scientific substantiation and development of complex processing of secondary products of grain processing into the physiological functional ingredients, that have prebiotic and antioxidant activity. The technologies of "Carbohydrate-protein concentrate", "Concentrate BAS", "concentrate dietary fiber", preparation of polyphenols "Zepofen", preparation of xylooligosaccharides "Prebixyl" were developed.
