The thesis is devoted to the improvement of the technology of table white wine from the grape varieties of generative (Aromathiy, Zagrey, Iskorka, Muscat odesskiy) and clone (Sukholimanskiy beliy, Telti kuruk) selection of NSC IV&WM, named after V.E. Tairov. The complex estimation of the grapes of the generative and clone selection of NSC IV&WM, named after V.E. Tairov according to physical and chemical, biochemical and organoleptic indices, has been carried out; the influence of agro-meteorological factors of grape vegetation period on formation of the basic technological indices of the investigated varieties, has been revealed.
