Essay

The thesis contains theoretical and experimental material on the analysis of the current state of quality and naturalness of bee honey, entering the trade network of domestic and export markets on the basis of the requirements of domestic standards (GOST). For the first time, a complex of studies of the quality parameters of honey for its compliance with both domestic and European standards was carried out. On the basis of the experimental data, the approaches to assessing the quality and safety of bee honey in Ukraine aimed at providing a quality product to the population, protecting the domestic market and harmonizing individual indicators with international requirements have been improved.
