Essay

The thesis is devoted to the development of pectin technology from potato pulp – waste of potato starch production. The implementation of the technology will improve the environmental situation in the region, increase the profitability of production and obtain valuable products, the production of which in Ukraine is not available. On the basis of optimization of experimental data, parameters of the optimal technological regime for pectin extraction from potato pulp are established. The physico-chemical properties of potato pectin obtained by using different methods have been investigated. The possibility of improving the physico-chemical properties of potato pectin by means of complex processing of mixtures of potato pulp and other vegetable secondary raw materials is considered. A hardware-technological scheme for processing potato pulp for pectin and potato powder has been developed. The technology of potato pectin was tested at the enterprise “VIMAL” in Chernigiv. The economic effect from the introduction of technology is calculated.
