Essay

The subject of the thesis is the development of scientific foundations of refrigeration technology which can be used for designing processes and apparatus of stream refrigeration processing of food raw materials and foodstuffs, in conditions of industrial refrigerators, solving the problems of energy- and resources saving. Methods of investigations - build-up of the theoretically grounded mathematical models, carrying out of experiments. Scientific results - designed procedures of calculation of thermal characteristics of meat, fish raw materials, dynamics of a modification of temperature fields, heat flows etc. during cooling, freezing, thawing, dynamics of mass losses of raw materialse, designing of tunnels for the stream refrigerating processing, carrying out technique - technological expertise.The results are introduced at twenty meat-processing factories of Ukraine, that has yielded economies 10-15 % electrical energy and has allowed to shun above permitted standard mass losses of raw materials.
