Object - udder and milk of cows of Simmental, Black-and-White, Red-and-White, Ukrainian Black-and-White milk breed and Pinzgau breed and their crosses with Mountbeliard, Holstein Black-and-White, Holstein Red-and-White, Holland and Angler breeds. Purpose - to study parameters of technological development of udder of cows of native breeds and their crosses with breeds of foreign selection depending from exploitation conditions, to improve the practical approaches to milking process and to develop the new methods of milk quality control. Methods - zootechnical, p--hysiological, optic-spectral, physical-chemical, mathematic-statistical. Novelty - it is for the first time that functional irregularity of udder quarters development of cows has been theoretically explained and practically approved, which had been caused by interbreed, breed and morphological peculiarities of the udder. The parameters obtained serve as a base for further improvement of the automated milking systems. The parameters of technological development of udder of the breed Pinzgau have been studied for the first time and the new method of estimation of udder technological index has been proposed. The optic-spectral characteristics of milk components have been investigated and taken as a base for theoretical and practical approaches to the problem of milk quality determination in the process of milking. Results of researches - are being used in theory, practice and for the study purposes. Branch - animal production
