Essay

The dissertation is devoted to the complex problems solution of extending pumpkin consumption terms, approaches improvement concerning extending the period of fresh food consumption, comprehensive study of potential abilities of melon, marrow, cucumber fruits and factors affecting their market state and chemical content. The scientifically based conception of widening the period of pumpkin fruits consumption the main elements of which are early harvesting, terms of gathering fruits for storage, dosing of melon fruits with endogen ethylene, products transportation from the Southern Ukraine has been formulated. The selection of melon and marrow variety according to the multi criterion method has been conducted. Conformity to natural laws of nutrients accumulation and their changes during the process of storing in pumpkin fruits depending on the variety peculiarities and weather conditions of the vegetation period, storage conditions has been determined. Complex researches of thermal and physical, physical, physiological, structural and mechanical properties, morphological indices of melon, marrow and cucumber fruits have been improved. Competitiveness of pumpkin fruits as to their complex indices has been scientifically based.
