The thesis study is devoted to experimental substantiation of theoretical principles and development of the system for estimation, forecasting and manufacture of high quality pig products by means of improving methodological approaches, fundamental analysis of the ontogenetic and proxy type factors' influence, and implementing a universal model for improving the meat productivity and quality of pig meat in the modern conditions of the commercial pig breeding. The multiple studies of peculiarities in the course of autolytic processes in muscle tissue have been performed, and the significant influence of the muscle type on qualitative parameters of meat maturation has been proved. The system of express quality assessment of meat in pig carcasses was developed and adapted, and an unconventional method for mass assessment and selection of muscle tissue samples was suggested. The significant influence (p < 0.05-0.001) of the genotype factors, live weight, sexes and floor type (concrete and deep sandy-straw bedding) on the nature of the fat deposition topography, morphofunctional, chemical and biological features of various tissues and organs, as well as the manifestation specificity of pigs' adaptation to the animals keeping conditions has been determined. The morphological distribution peculiarities are determined for the streaky bacon layers in pigs, which correspond to the best taste properties of the finished product and depend on the genotype and conditions of keeping animals on fattening. It has been determined that the heterozygous genotypes of the GHRH growth hormone receptor gene, CT of the LEPR leptin receptor gene and the combination of СС / GA genotypes of CTSK and CTSL cathepsin genes contribute to the development of the leaner pork indicators. According to the results of the comparative analysis of the methodology for determining the lean meat content in pig carcasses according to the European "EUROP (S)" system and the cost characteristic, the importance of developing the national assessment system has been substantiated. A universal model to improve the quality pork production in the current conditions of commercial pig production has been developed and implemented.
