The problem of improving the diet of servicemen of the Armed Forces of Ukraine is extremely relevant today, especially in connection with the military conflict in eastern Ukraine. Healthy and adequate nutrition ensures the normal state of the body, determines mental and physical development, the formation of immunity and adaptation of the body's reserves, which is relevant for the military personnel.Based on the analysis of the state of nutrition of the military personnel, it was established that it is necessary to prevent existing deficiencies of macro- and microelements and optimize the quantitative and qualitative composition of their diets. At the same time an effective way to optimize diets is to expand the range of a set of dry products for the military personnel with the products with the improved consumer properties.In this regard the development of instant cereals (IC), with the specified quality indicators is relevant, which will allow balancing and improving the diet of the military personnel. Thus the formation of quality based on the methodology of commodity research of new ICs with the improved consumer properties and their comprehensive trade analysisis an actual line for forming the range of food products of the military personnel, which determined the topic of the thesis work.
