Rozbytska T. The development and implementation of an integrated process control system to ensure resource conservation and safety of dairy products

The main purpose of the work is to develop and implement an integrated process control system to ensure resource conservation and safety of dairy products. The concept is theoretically substantiated and experimentally confirmed, which consists in a systematic approach to the management of safety and quality of dairy products based on the identification of influencing factors at the stages of their life cycle, optimization of their production, storage and sale in accordance with DSTU ISO 22000 + DSTU ISO 50001. In accordance with the set goal and defined research objectives for the first time: the model of the integrated management system (DSTU ISO 22000 + DSTU ISO 50001) in the conditions of the milk processing enterprises of Ukraine is developed; a system of rating assessments of integrated energy consumption management at a milk processing enterprise has been developed; the mathematical model of management of efficiency of production of dairy products with use of methods of the regression analysis is developed; practical approbation of the developed model of introduction of the system of complex management of energy consumption in the conditions of LLC Rykhalsky milk powder plant of Zhytomyr region is carried out. Improved: the current HACCP system and food safety management; methods of energy audit; mechanisms and tools to increase the level of energy saving of the food enterprise. The author analyzed the literature data and based on them substantiated and formulated the main idea of the research. The author personally selected the methods of performing a set of analytical and experimental studies. The paper analyzes and systematizes research materials, conducts critical analysis and statistical data processing, develops a model of an integrated system, prepared, designed and published research materials.
