Object of research - process of pasteurization of milk. The purpose of research: increase of efficiency of pasteurization of milk by refinement of the existing idealized reasons of process both substantiation of parameters and operational modes of electropasteurizers. Method of testings: the theory of an electromagnetic field, physical simulation, planning(glide) of experiment, photometry. The veracity of outcomes is affirmed by conformity analytical and experimental research of the built vehicles. The novelty is encompass byed obtaining of techniques of definition of parameters of electropasteurizers; the mathematical models are designed, the electro-physical characteristics of milk and configuration items are updated.
