Essay

It have been developed the antihypertensive and cardioprotective values of the peptides that were generated after proteolysis of beta-casein from cow milk by lactococci. It was elaborated the method of differential fractionation by urea and over-purification by ion-exchange chromatography for obtain the homogeneous beta-casein. The systems for the harvesting of bacterial cells and for the proteolysis of beta-casein by lactococci and milk-clotting enzymes were developed. Oligopeptides derived after proteolysis of beta-casein by strain l12 of Lactococcus lactis subsp. lactis decreases the arterial blood pressure and reduce of cardiac hypertrophy after chronic administration into hypertensive rats.
