Research subjects: white table wines and wine materials from grapes. Research objectives: Development of methods for the determination of the optimum fining scheme for white table wine materials against irreversible colloidal clouds based on studying of transformation of the biopolymer complexes. Methods: Conwentional enochemical methods Theoretical and practical results: The criteria for the determination of the optimum scheme of wine materials treatment depending on complex type was proposed; the methods for the etermination of the optimum fining scheme and doses of fining substances were developed and included in the Technological instructions "The recommendations on the conditions of grape processing and the treatment of white table wine materials with the aim of providing their stability", approved by the UAAS. Novelty of introduced: Five types of biopolymer complexes of white table wine materials were establised; the influence of wine production technologies on the formation of complex type andinterdependence between the complex type and the fining scheme of wine materials were investigated; the mechanism of interaction between the fining substances and the biopolymer complex of wine materials was precised. Implementation degree: Methods for the determination of the optimum fining scheme and doses of fining substances have been industrially tested and introduced into enterprises of the winemaking imdustry.
