Object of research: Reversible colloidal clouds of strong wines. The objective: To develop a protocol enabling control of stabilization of strong wines. Methods: Conventional methods used in winemaking. Novelty: The effects of the composition and properties of the biopolymer complex of the wine on the formation of reversible colloidal clouds, and the regularities governing transformations of the biopolymer complex have been established. A system of criteria including tests for cloudiness and an algorithm to determine the optimum scheme of treatment of strong wine materials against reversible colloidal clouds have been developed. Implementation: A protocol enabling control of stabilization of strong wines methological instructions tested on the state farms "Yantarny" and "Radsad" are recommended for the wine industry. The implementation volume: The protocol developed has been applied 42000 dal of wine material. Field: Wine industry.
