Object of research: Technology for processing apples with increased radionuclide levels. Research objective: Development of a technology for processing apples with increased radionuclide levels grown in the 30-km isolation zone of the Chernobyl atomic power station. Methods: Conventional methods to be used for winemaking research. Theoretical and practical results: Caesium-137 and strontium-90 accumulation coefficients have been determined, which will allow to predict levels of the above radionuclides in fruit and berry varieties depending on their levels in the soil by means of regression equation. Novelty: Regularities governing changes in caesium-137 and strontium-90 levels during the processing of contaminated apples by using different methods have been revealed. Degrees of introduction: "Methodological Recommendations with refer to agricultural activities" approved by the Ministry of Emergencies and the Ministry of Agriculture of Ukraine.
