Essay

The thesis is dedicated to the problem of development of the rational production technology of aerated semi-sparking wines. Usage efficiency for manufacture aerated semi-sparking wines of grapes sorts growing in a foothill zone of Autonomous Republic of Crimea is scientifically justified and observationally proved. The dependence of a parameter of sparkling properties of aerated semi-sparking wines from an aspect of barmy distributing and a way of manufacture is established at the secondary fermentation. The technology is approved on Pervomaisk winery Simferopol Region, Autonomous Republic of Crimea. Economic benefit makes 553,58 grivnas/1000 botties. Key words: a combined way of a saturation dioxid carbon, a grapes sort, correction of structure of must and wine materials, a parameter of sparkling properties.
