Work is devoted to improvement of technology of the inverted syrups from solutions of brown sugars which application provides high biological and preventive value, sterility of an end-product. Two ways of solutions of brown sugars clarification are de-veloped: peroxide of hydrogen with monoammoniyfosfat and coagulant "Polvac" on which patents of Ukraine are receive clarification of products. Optimum parameters of inversion of saccharose solutions yellow sugars enzyme and acid by ways with their intensi-fication ultrasonic fluctuations and a superhigh-frequency irradia-tion are established. The combined technological circuit of manu-facture of the inverted syrup which realization allows to receive a sweet product with the reduced contents of saccharose and the raised contents of amino acids, micro- and macrocells is
