Dissertation is devoted to solving the problem on qualities assurance and safety creation of drinks for sportsmen, which provide an organism with nutrients, appropriate by the amount and proportion to the specific of metabolic processes which flow on the different stages of the psychophysical loading. It is developed and scientifically founded the classification of drinks for sportsmen. The criteria of the optimization of the nutrient composition of drinks for sportsmen were developed. On the basis of mathematical design and taking into account the results of experimental researches, optimal proportions of compounding components of drinks are designated that ensure high-quality characteristics of the finished products, their stability at storage. Complex commodity expert estimation of consumer's properties of drinks for sportsmen is conducted and set the mechanism of their changes in the process of conservation. Scientifically proved the critical points of control of dangerous factors at production, advancement, realization of new drinks for sportsmen. Physiology efficiency of new drinks is set for sportsmen on the different stages of the physical loading.
