Essay

The thesis is devoted to tomato vegetables storage ways improvement. Film-forming compositions for tomato vegetables processing during storage with medicinal and vegetable raw material and chitosan extracts use are scientifically substantiated and developed. The preconditions of medicinal and vegetable raw material and chitosan extracts use as a part of film-forming compositions for tomato vegetables fruits processing are determined on the base of theoretical and experimental researches. The chemical composition and physical and mechanical properties of fresh tomato fruits, sweet peppers, eggplants of different botanical varieties were studied. The composition of medicinal and vegetable raw material extract compositions is substantiated on the base of potential toxicity and antimicrobial properties determination. The fungistatic and antibacterial properties of different film formers are determined, the film former concentration in the compositions for tomato vegetables processing is substantiated. Satisfactory toxicological profile of the developed film-forming compositions was established. The technological instruction project for tomato vegetables processing is developed. The economic efficiency and high commercialization level of scientific developments are proved. 3 patents of Ukraine for invention and 3 patents of Ukraine for utility model are received. The research results are introduced into the production and educational process.
