The thesis is devoted to the development of film-forming compositions with fungistatic properties for storage of bird cherries, cherries and apricots based on extracts from medicinal and plant raw materials on the main pathogen of stone fruit diseases are analyzed. Commodity-biochemical evaluation of cherry, sweet cherry, apricot fruits is given and the epiphytic microflora of selected stone fruits is studied. The potential toxicity and antimicrobial properties of extracts from medicinal and plant raw materials were studied. Based on the research, the rational concentrations of the components of the model systems of film-forming compositions from plant extracts were determined, the influence of the molecular weight of water-soluble chitosan on the growth of fungi - pathogens of cherries, sweet cherries and apricots was determined. The rational prescription composition of film-forming compositions for processing of cherry, bird cherry, apricot fruits is established and the subchronic toxicity of the created film-forming compositions is investigated. According to the results of the research, the technology of covering cherry, bird cherry and apricot fruits with film-forming compositions is developed. Technological documentation for new storage technologies has been approved in accordance with the predetermined procedure. The proposed technology has been tested and implemented in the food industry of fruit and vegetables and in the educational process of KhSUFTT. Three utility model patents are obtained. The complex indicator of the quality of fruits of cherry, bird cherry and apricot at covering by film-forming compositions is calculated, economic efficiency from the implementation of the developed technology and prospects of its introduction into manufacture is defined.
