Dissertation is devoted to the improvement of diffuser-press technology of sucrose extract for beet cossettes. The method of sucrose optimum maintenance calculation in the sugar-beet cossettes at the outlet from an extractor depending on technological quality of beet and degree of exhausted cossettes pressing is offered. The methods of press water treatment are developed.Key words: extraction of sucrose, press of cossettes, exhausted cossettes, press water, purification, diffusion juice.
